Since March 2009, TDP has housed a new exciting facility, named “the Opificio”. This word, derived from the Latin “opificium”=workplace, generally identifies a factory where raw materials are processed and transformed into the finished product. In our case, it is a multi-functional area, where raw materials are processed. Specifically, the beef and pork from the animals bred on the Estate, fed on the forage grown on the Estate, under the careful vigilance and control of the many people that work in and for the Estate. The finished products are the cuts of meat, the dried and cured meats, as well as olive oil, wine, chick peas and spelt.

The building that houses the newborn” Opificio” is a historical landmark of the Estate. Adjacent to the Farm, for decades it was the centre of all those traditional activities connected to breeding and farming, serving at once as a warehouse, carpenter’s workshop and blacksmith’s forge. After careful and elaborate restoration, which has re-qualified and re-defined the building and its uses through faultless maintenance of the original architecture, the Opificio is today the cornerstone of the Estate’s new organizational and production strategy.

 

 


The venue’s comfortable, up-to-date spaces fully equipped and furnished with modern amenities, host:
L’OFFICINA and LA FUCINA DEL FABBRO. Once a carpenter’s workshop and forge, today the Farm shop & Product Tasting, where visitors may taste, and purchase the Estate’s products.
LA MACELLERIA, the Butchery, where fresh meats are sectioned and processed
The spaces that used to be dedicated to IL DEPOSITO LEGNAME, the wood storehouse, today accommodate a spacious and fully-equipped kitchen. Meals for functions and tastings are prepared here by the Estate’s staff, and cooking courses are available on request.
IL MULINO, once the flour mill, today is a large multi-functional hall which may host luncheons, dinners, concerts, conferences and much more!
FALEGNAMERIA, once a carpenter’s workshop, nowadays houses an up-to-date Library and Reading Room, also featuring wireless internet connection.
MAGAZZINO DEI CEREALI, once the cereal warehouse, and still a warehouse today. The Estate’s products including spelt and chick peas are stocked here.


The idea was the result of the Estate’s desire to create a direct production/consumer relationship, eliminating all intermediaries and middlemen.

However, this demanding commitment is based on something more than the mere economic issue. The Estate aims to re-establishing a dynamic role in the local agricultural and food system, without delegating to intermediaries, but by creating a new, fruitful relationship, between agricultural production and urban consumption.

Thus, the consumers are able to rediscover a better quality and relationship with food. To learn long-lost skills and know-how, to feel like active individuals, free from any conditioning in their food choices. To realize that, today, one can still savour delectable dishes, rich in a taste that comes from afar, not only the taste of Florentine T-bone steak, (Chianina or Maremmana!), but also other cuts of meat which have been virtually eradicated by the globalization of taste, production and marketing.

Furthermore, the Estate has the advantage of increasing the value of its production, reacquiring its executive power and finding further fulfilment in its activities.

TDP however, fully recognizes that today, there are urgent issues to be dealt with:
A growing demand for excellent quality, safe food, and full, complete information and careful control of the productive processes of food stuffs.
A more acute sensitivity and interest towards the cultural aspects of food, its localization and traditions.
A newborn attention to the ethical aspects (social and /or environmental) of production and consumption.

In response to this complex evolution of consumers’ demands, TDP has chosen a new option of economic development, facilitating the public’s knowledge of its products’ qualities, promoting them throughout the area and elsewhere and contributing to the birth, or re-birth, of the desire to be part of a specific food culture, and, especially, of faith and empathy with those that have undertaken the path of quality and authenticity of production.
